Ginger (Shunthi / Ingwer / Zingiber officinale) is a creeping perennial plant on a thick bulbous rootstock (rhizome) that spreads underground. In spring it grows into a green, reed-like stem up to 1.5 metres high. The peduncle originates directly from the root and ends in an elongated spike from which a white, yellow or red flower grows.
The ginger root is harvested in autumn. It is carefully extracted from the soil and freshly processed or dried and ground. Ginger is one of the oldest spices in the world. In the Indian kitchen it is not to be missed in any dish and is a firm component of each Currypulvers. It is said that Alexander the Great brought the hot tuber to the West.
